  • 8 oz medium-width rice noodles
  • 2 cups mixed fresh vegetables (bean sprouts, bell peppers, green onions)
  • 2 large eggs
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • Lime wedges for serving

Instructions

  1. Soak rice noodles in hot water until softened but still firm; drain and set aside.
  2. In a large skillet over medium-high heat, sauté sliced chicken until golden brown (about 5 minutes).
  3. Add chopped bell peppers and cook for an additional 2 minutes.
  4. Push ingredients to one side and scramble beaten eggs on the other side until softly set.
  5. In a bowl, whisk together soy sauce, tamarind paste, fish sauce, and sugar; pour into the pan and mix well.
  6. Fold in softened rice noodles until coated with sauce.
  7. Toss in bean sprouts and green onions right before serving. Serve warm with lime wedges.
