  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 8 corn or flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream (for serving)
  • Fresh cilantro (optional for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Boil water in a large pot and cook chicken until internal temperature reaches 165°F (15-20 minutes). Remove and shred.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until golden brown (about 5 minutes).
  3. Combine shredded chicken with sautéed onions and garlic. Spoon mixture into tortillas, roll tightly, and place seam-side down in a greased baking dish.
