  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. In a large bowl, mix ricotta, mozzarella, Parmesan, eggs, sautéed garlic, chopped basil, salt, and pepper until well combined.
  4. Layer half of the zucchini in a greased baking dish, followed by half of the cheese mixture. Repeat with remaining zucchini and cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until golden brown.
  6. Let cool slightly before serving.
