- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup whole milk ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 2 garlic cloves, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
- In a large bowl, mix ricotta, mozzarella, Parmesan, eggs, sautéed garlic, chopped basil, salt, and pepper until well combined.
- Layer half of the zucchini in a greased baking dish, followed by half of the cheese mixture. Repeat with remaining zucchini and cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 15-20 minutes until golden brown.
- Let cool slightly before serving.
