- 4 medium Russet potatoes
- 1 lb ground beef or turkey
- 1 packet taco seasoning (about 2 tablespoons)
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup sour cream (or Greek yogurt)
- 2 green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes and poke holes all over them with a fork.
- Bake the potatoes directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
- In a skillet, cook the ground meat over medium heat until browned. Drain excess fat and stir in taco seasoning according to instructions.
- Mix half of the cheddar cheese into the meat mixture until melted.
- Once cool enough to handle, cut the baked potatoes lengthwise and fluff the insides with a fork.
- Stuff each potato with the meat mixture and top with remaining cheese. Return to the oven for another 10-15 minutes until bubbly.
- Drizzle with sour cream and sprinkle green onions before serving.
