- 3–4 boneless, skinless chicken breasts
- 1 cup frozen spinach, thawed and drained
- 1 can (14 oz) canned artichoke hearts, chopped
- 8 oz cream cheese, softened
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Season chicken with salt and pepper; cook in a skillet over medium heat until golden brown, about 6-7 minutes per side. Allow cooling before shredding.
- In a large bowl, mix cream cheese, mozzarella cheese, spinach, artichoke hearts, garlic powder, onion powder, salt, and pepper until smooth.
- Fold in shredded chicken until evenly coated.
- Pour mixture into the prepared baking dish and smooth out.
- Combine panko breadcrumbs with olive oil; sprinkle on top of casserole.
- Bake for 25-30 minutes until bubbly and golden.
