  • 34 boneless, skinless chicken breasts
  • 1 cup frozen spinach, thawed and drained
  • 1 can (14 oz) canned artichoke hearts, chopped
  • 8 oz cream cheese, softened
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Season chicken with salt and pepper; cook in a skillet over medium heat until golden brown, about 6-7 minutes per side. Allow cooling before shredding.
  3. In a large bowl, mix cream cheese, mozzarella cheese, spinach, artichoke hearts, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in shredded chicken until evenly coated.
  5. Pour mixture into the prepared baking dish and smooth out.
  6. Combine panko breadcrumbs with olive oil; sprinkle on top of casserole.
  7. Bake for 25-30 minutes until bubbly and golden.
