  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mushrooms (button or cremini), chopped
  • 4 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Butterfly each chicken breast by slicing horizontally to create a pocket.
  2. In a skillet over medium heat, melt butter and sauté mushrooms and garlic until tender, about 5 minutes.
  3. In a bowl, mix cooked mushrooms and garlic with cream cheese, mozzarella, Parmesan, salt, pepper, and herbs.
  4. Spoon the mixture into each chicken breast pocket and secure with toothpicks if necessary.
  5. Place stuffed chicken in a greased baking dish and bake for 25-30 minutes until cooked through (internal temperature should reach 165°F/75°C).
