- 12 jumbo pasta shells
- 3 cups cooked boneless, skinless chicken breasts, diced
- 1 cup fresh broccoli florets, chopped
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried Italian herbs (oregano and basil)
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cook the jumbo pasta shells in salted boiling water until al dente, following package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the diced chicken seasoned with salt and pepper; cook until browned.
- Stir in chopped broccoli, garlic powder, and Italian herbs; cook until broccoli is bright green.
- In a bowl, mix ricotta, half of the mozzarella, and Parmesan. Combine with the chicken-broccoli mixture.
- Stuff each shell generously with the filling. Spread marinara sauce on the bottom of a baking dish and place stuffed shells on top. Cover with remaining marinara and sprinkle with leftover mozzarella.
