  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup rinsed quinoa
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp garlic powder
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. In a skillet over medium heat, sauté the chicken breasts in olive oil until golden brown (7-8 minutes per side). Allow cooling slightly before shredding.
  3. In a saucepan, combine rinsed quinoa with chicken broth and bring to a boil. Add broccoli, cover, and simmer for about 15 minutes until quinoa is fluffy.
  4. In a large bowl, mix shredded chicken, cooked quinoa and broccoli, garlic powder, salt, pepper, and half of the cheese.
  5. Pour the mixture into the prepared baking dish, top with remaining cheese, and bake for 25-30 minutes until bubbly and golden brown.
