- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup rinsed quinoa
- 2 cups broccoli florets (fresh or frozen)
- 1 cup shredded sharp cheddar cheese
- 2 tsp garlic powder
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil.
- In a skillet over medium heat, sauté the chicken breasts in olive oil until golden brown (7-8 minutes per side). Allow cooling slightly before shredding.
- In a saucepan, combine rinsed quinoa with chicken broth and bring to a boil. Add broccoli, cover, and simmer for about 15 minutes until quinoa is fluffy.
- In a large bowl, mix shredded chicken, cooked quinoa and broccoli, garlic powder, salt, pepper, and half of the cheese.
- Pour the mixture into the prepared baking dish, top with remaining cheese, and bake for 25-30 minutes until bubbly and golden brown.
