  • 9 oz fresh or frozen tortellini
  • 1 lb lean ground beef (or turkey)
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (cheddar & Monterey Jack blend)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook tortellini according to package instructions in salted boiling water (3-5 minutes). Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté diced onion until translucent, then add minced garlic and cook for another 30 seconds.
  3. Push onions aside and add ground beef; season with cumin and chili powder. Brown meat thoroughly while breaking it apart.
  4. Pour enchilada sauce over the beef mixture and let simmer for about 5 minutes.
  5. Gently fold in cooked tortellini and sprinkle shredded cheese on top. Cover until cheese melts (2-3 minutes).
  6. Serve hot, garnished with fresh cilantro if desired.
