  • 1 lb lean ground turkey
  • 1 cup shredded mozzarella cheese
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 cup ketchup or BBQ sauce

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a skillet, sauté onion over medium heat until translucent; add garlic and cook for another minute.
  3. In a large bowl, mix ground turkey, sautéed onion and garlic, breadcrumbs, egg, parsley, salt, and pepper until combined.
  4. Place half of the turkey mixture in the loaf pan. Create a well in the center and fill with shredded cheese. Top with remaining turkey mixture.
  5. Spread ketchup or BBQ sauce on top of the meatloaf.
  6. Bake for 55-60 minutes or until internal temperature reaches 165°F (74°C). Let rest before slicing.
