  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Grate about three medium-sized carrots until you have approximately two cups.
  4. In another bowl, beat together eggs and vegetable oil until frothy; stir in vanilla extract.
  5. Fold the grated carrots into the wet mixture gently.
  6. Gradually add dry ingredients to wet ingredients while stirring until just combined.
  7. Pour batter into prepared pan; bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool completely before slicing into squares or bars.
