  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup grated carrots (about 2 medium)
  • 1 cup grated zucchini (about 1 medium)
  • 1 medium apple (peeled and chopped, about 1 cup)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with brown sugar, vegetable oil, and vanilla until smooth.
  4. Fold in the grated carrots, zucchini, and chopped apple into the wet mixture.
  5. Gradually add dry ingredients to the wet mixture; stir gently until just combined.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool for about 10 minutes before transferring to a wire rack.
