  • 2 tbsp extra virgin olive oil
  • 1 tsp salt

  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • Fresh herbs (optional): thyme or rosemary

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the buttercup squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over both halves, then season with salt, pepper, brown sugar, and cinnamon.
  4. Place the squash cut-side down on a parchment-lined baking sheet.
  5. Roast for 30-40 minutes until tender when pierced with a fork.
  6. If using fresh herbs, sprinkle them on top during the last 10 minutes of roasting.
  7. Let cool slightly before serving as is or mashed.
