  • 8 oz spaghetti or penne
  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  3. Add broccoli florets and splash with water; cover and steam for about 3 minutes until bright green and tender-crisp.
  4. Remove the lid and sauté broccoli until slightly charred.
  5. Drain the pasta, reserving 1/2 cup of pasta water. Combine the pasta with the broccoli mixture in the skillet.
  6. Stir in reserved pasta water, lemon juice, and grated Parmesan until creamy.
  7. Top with toasted pine nuts and additional Parmesan if desired before serving.
