  • 1 French baguette, sliced into ½-inch pieces
  • 4 oz Gorgonzola cheese, crumbled
  • 2 tbsp olive oil (plus more for drizzling)
  • 2 tbsp fresh herbs (rosemary or thyme), finely chopped
  • 2 cloves garlic, minced
  • ½ tsp freshly cracked pepper
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush with olive oil; bake until golden brown (8-10 minutes).
  2. Season beef tenderloin with salt and pepper. Heat olive oil in a skillet over medium-high heat; sear the beef for 3-4 minutes on each side until browned and medium-rare (135°F/57°C). Let it rest.
  3. In a saucepan over low heat, melt butter and sauté minced garlic until fragrant (30 seconds). Add heavy cream and crumble in Gorgonzola until smooth.
  4. Slice rested beef against the grain. Top each crostini with beef slices, drizzle with Gorgonzola sauce, and garnish with fresh herbs and balsamic glaze.
