Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb)

  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel and chop sweet potatoes into bite-sized cubes. Toss in olive oil, salt, and pepper.
  3. Pat chicken breasts dry; season with salt and pepper, then coat with BBQ sauce.
  4. Spread sweet potatoes on a baking sheet lined with parchment paper. Place chicken on another tray.
