- 1 red bell pepper, sliced

- 1 cup shredded carrots
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tbsp Sriracha sauce (or to taste)
- 2 tbsp freshly squeezed lime juice
Instructions
- Preheat your grill or skillet over medium-high heat. Season the chicken breasts with salt and pepper. Grill until golden brown and cooked through, about 6-7 minutes per side.
- While the chicken cooks, wash and chop the lettuce into bite-sized pieces. Slice the bell pepper and cucumber, and shred the carrots.
- In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha sauce, and lime juice until smooth. Adjust seasoning if desired.
- Allow the chicken to rest for five minutes before slicing it into strips.
- In a large bowl, toss together chicken slices and veggies with the sauce until evenly coated. Serve immediately.
