  • 3 ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (for topping)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 1/4 cup whole milk
  • 1/4 cup unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, mash the bananas until smooth.
  3. In another bowl, whisk together melted butter, granulated sugar, eggs, milk, and mashed bananas until frothy.
  4. In a separate bowl, combine flour, baking powder, cinnamon, and salt. Gradually fold into the wet mixture until just combined.
  5. In a small bowl, mix brown sugar with a bit of flour for the topping.
  6. Fill each muffin cup with batter and sprinkle the brown sugar mixture on top.
  7. Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
