- 1 lb Brussels sprouts, trimmed and halved
- 6 oz thick-cut bacon, chopped
- 3 tbsp pure maple syrup
- 3 tbsp aged balsamic vinegar
- 2 tbsp extra virgin olive oil

Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Spread the chopped bacon evenly on the baking sheet and roast for 10-12 minutes until crispy.
- While the bacon cooks, wash and trim the Brussels sprouts, cutting larger ones in half.
- Add the Brussels sprouts to the baking sheet with the crispy bacon, drizzle with olive oil, maple syrup, balsamic vinegar, salt, and pepper; toss to coat.
- Roast everything for an additional 20-25 minutes until golden brown, stirring halfway through.
- Serve warm, garnished with extra bacon if desired.
