  • 1 lb Brussels sprouts, trimmed and halved
  • 6 oz thick-cut bacon, chopped
  • 3 tbsp pure maple syrup
  • 3 tbsp aged balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the chopped bacon evenly on the baking sheet and roast for 10-12 minutes until crispy.
  3. While the bacon cooks, wash and trim the Brussels sprouts, cutting larger ones in half.
  4. Add the Brussels sprouts to the baking sheet with the crispy bacon, drizzle with olive oil, maple syrup, balsamic vinegar, salt, and pepper; toss to coat.
  5. Roast everything for an additional 20-25 minutes until golden brown, stirring halfway through.
  6. Serve warm, garnished with extra bacon if desired.
