Instructions
- Preheat oven to 325°F (160°C). In a bowl, mix crushed graham crackers, melted butter, and sugar until well combined. Press firmly into a springform pan to form the crust.
- Bake the crust for 10 minutes until golden brown. Remove from oven and let cool.
- In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, then mix in Baileys and sour cream until creamy.
- Whip heavy cream to soft peaks, then gently fold into the cheesecake mixture.
- Pour filling over the cooled crust and smooth with a spatula. Cover with plastic wrap and chill for at least 4 hours or overnight.
