  • 1 lb lean ground beef
  • 6 slices thick-cut bacon
  • 1 cup shredded sharp cheddar cheese
  • 1 cup long-grain white rice
  • 1 medium sweet onion, chopped
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • Salt and pepper to taste
  • Optional: Pickled jalapeños for garnish

Instructions

  1. Rinse the rice under cold water until clear. In a saucepan, combine rice and 2 cups water; bring to a boil, then cover and simmer for 15 minutes.
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, keeping some drippings in the skillet.
  3. Sauté the chopped onion in the bacon drippings until translucent (3-4 minutes). Add ground beef; cook until browned.
  4. Stir in ketchup, mustard, salt, and pepper until well mixed.
  5. Lower heat and sprinkle shredded cheese over the beef mixture; cover for 2-3 minutes until melted.
  6. Assemble by layering rice at the bottom of serving bowls, topping with beef mixture, crumbled bacon, and optional jalapeños.
