  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup fresh apple cider
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 4 oz cream cheese, softened
  • ½ cup unsalted butter, softened

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream softened butter and sugar until fluffy. Add eggs one at a time and mix well.
  4. Mix in apple cider and vanilla until combined.
  5. Gradually fold in dry ingredients until just mixed.
  6. Drop dollops of batter onto prepared sheets about two inches apart.
  7. Bake for 10 minutes until edges are lightly golden. Cool on wire racks.
  8. For the filling, beat cream cheese and butter until smooth; gradually mix in powdered sugar.
  9. Spread filling on half the cooled cookies and sandwich with the other halves.
