  • 8 oz elbow macaroni
  • 1 cup canned pure pumpkin
  • 2 cups sharp cheddar cheese, shredded
  • 6 slices thick-cut bacon, diced
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp nutmeg
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, cook diced bacon over medium heat until crispy. Remove from pan, leaving some fat.
  3. Melt butter in the same skillet, whisk in flour until bubbly. Gradually add milk, stirring until thickened.
  4. Stir in pureed pumpkin and cheddar cheese until melted. Season with nutmeg, paprika, salt, and pepper.
  5. Fold cooked pasta into the cheese sauce and mix in crispy bacon.
