  • 2 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter (divided)
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 1 cup panko bread crumbs
  • Salt and pepper to taste

Instructions

  1. Caramelize the Onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook, stirring occasionally for about 20 minutes until golden brown and fragrant.
  2. Prepare the Pasta: Cook macaroni according to package instructions until al dente. Drain and set aside.
  3. Make the Cheese Sauce: In a pot, melt remaining butter over medium heat. Whisk in flour until bubbly, then gradually add milk while whisking until thickened (about 5 minutes).
  4. Add Cheeses: Stir in shredded cheddar and Gruyère until melted. Season with salt and pepper.
  5. Combine: Mix cooked pasta into the cheese sauce; fold in caramelized onions gently.
  6. Top & Bake: Transfer to a greased baking dish, sprinkle panko on top, and bake at 350°F (175°C) for about 20 minutes until golden brown.
