  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅔ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 2 tsp pure vanilla extract
  • 1 cup pecans, chopped and toasted
  • ½ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, melted butter, and ⅓ cup granulated sugar. Press into the bottom of a greased 9×9-inch baking pan.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream, remaining granulated sugar, eggs one at a time, and vanilla extract. Mix until fluffy.
  3. Pour the cheesecake mixture over the prepared crust and spread evenly.
  4. Bake for 30-35 minutes until set but slightly jiggly in the center.
  5. While baking, combine chopped pecans with brown sugar and melted butter in a small bowl.
  6. Remove from oven and sprinkle the pecan mixture on top; gently press down with a spatula.
  7. Return to oven for an additional 10-15 minutes until golden brown.
  8. Cool at room temperature before refrigerating for at least four hours or overnight.
  9. Slice into bars and serve.
