  • 4 fresh cod fillets (about 6 oz each)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp extra-virgin olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp chopped fresh parsley

Instructions

  1. Season the cod fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Once hot, add the cod fillets and sear for 3-4 minutes until golden brown.
  3. Carefully flip the fillets and cook for an additional 3 minutes until opaque and flaky. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  5. Gradually pour in heavy cream while stirring to combine. Let simmer for about 5 minutes until slightly thickened.
  6. Stir in lemon juice and parsley right before serving.
  7. Return the cod fillets to the skillet for an additional 2 minutes to soak up the sauce.
  8. Serve warm over rice or alongside steamed vegetables.
