  • 1/4 cup cocoa powder
  • 1/2 cup unsalted butter (cubed)
  • 1/4 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 large eggs
  • 6 oz high-quality dark chocolate (chopped)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, and sugar. Cut in butter until crumbly.
  2. Add cold water gradually until dough holds together. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Roll out dough on a floured surface to 1/8-inch thick and fit into mini tart pans. Prick bottoms with a fork.
  4. Bake for 15-20 minutes until set; cool on wire racks.
  5. Heat heavy cream until simmering, then stir in chocolate until melted. Cool slightly, whisk in eggs and vanilla.
  6. Pour filling into tart shells; bake for an additional 10-15 minutes until just set. Cool before serving.
