  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 4 oz cream cheese (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and sugars until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. In another bowl, mix oats, flour, and baking soda. Gradually add to the wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto a lined baking sheet, spacing them two inches apart.
  6. Bake for about 10 minutes until edges are golden but centers remain soft.
  7. Cool on wire racks.
  8. For the filling, beat cream cheese with powdered sugar and vanilla until smooth. If thick, add a splash of milk.
  9. Spread or pipe filling between two cookies to assemble.
