- 4 oz cream cheese (softened)

Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and sugars until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In another bowl, mix oats, flour, and baking soda. Gradually add to the wet mixture until just combined.
- Scoop tablespoon-sized portions onto a lined baking sheet, spacing them two inches apart.
- Bake for about 10 minutes until edges are golden but centers remain soft.
- Cool on wire racks.
- For the filling, beat cream cheese with powdered sugar and vanilla until smooth. If thick, add a splash of milk.
- Spread or pipe filling between two cookies to assemble.
