  • 3 large eggs
  • 1 ½ cups whole milk
  • 1 cup mascarpone cheese
  • ½ cup granulated sugar
  • 1 cup brewed espresso or strong coffee
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the crepe batter by whisking together flour, eggs, milk, and a pinch of salt until smooth. Let rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour about ¼ cup of batter, swirling to coat evenly. Cook until edges lift easily, flip, and cook briefly on the other side.
  3. In another bowl, combine mascarpone cheese, sugar, and vanilla extract until creamy. Gradually mix in cooled coffee until smooth.
  4. On a serving plate, layer crepes with the mascarpone filling in between each layer until all are stacked.
  5. Cover and chill in the fridge for at least 4 hours or overnight. Dust with cocoa powder before serving.
