  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 cup fresh or frozen raspberries
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mix melted butter and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Gradually incorporate cocoa powder and flour until just combined.
  3. Pour half of the brownie batter into the prepared pan, smoothing it out evenly.
  4. In another bowl, beat softened cream cheese, powdered sugar, and vanilla extract until creamy. Gently fold in half of the raspberries.
  5. Spread the cheesecake mixture over the brownie layer. Spoon dollops of remaining brownie batter on top and swirl gently for marbling.
  6. Bake for 30-35 minutes or until a toothpick comes out with moist crumbs. Allow to cool before cutting into squares.
