  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 medium Granny Smith or Honeycrisp apples, peeled and thinly sliced
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust. Bake for 10 minutes until golden brown; allow to cool.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until creamy. Incorporate eggs one at a time, then stir in sour cream and vanilla extract.
  4. Gently fold in sliced apples. Pour the batter over the cooled crust and bake for about 60 minutes until set but slightly jiggly in the center.
  5. Allow cooling at room temperature for an hour before refrigerating for at least four hours or overnight.
