  • 1 lb large shrimp (peeled and deveined)

  • ½ cup sun-dried tomatoes (chopped)

  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in salted boiling water according to package instructions until al dente (8-10 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp in a single layer; cook for about 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes; sauté for about 1 minute until fragrant. Stir in heavy cream and mix well.
  4. Add fresh spinach, stirring until wilted. Mix in grated Parmesan cheese and lemon juice until smooth.
  5. Return shrimp to the skillet along with drained orzo; toss gently to coat everything in the creamy sauce.
