  • 8 oz fettuccine or linguine
  • 1 lb large shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil and sauté shrimp until pink, about 3 minutes per side. Remove from skillet.
  3. Add minced garlic and asparagus to the skillet; cook until asparagus is tender but bright green, about 4 minutes.
  4. Pour in heavy cream while scraping any bits from the pan, then stir in Parmesan cheese until melted.
  5. Fold in the cooked pasta and reserved pasta water to reach desired consistency. Season with salt, pepper, and lemon juice.
  6. Serve warm, garnished with additional Parmesan if desired.
