Description

Creamy scalloped Yukon potatoes are the ultimate comfort food, combining tender layers of buttery Yukon Gold potatoes with a rich, creamy sauce and gooey cheese. Ingredients

  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups heavy cream
  • 3 cloves garlic, minced
  • 1 ½ cups cheddar cheese, grated
  • 4 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh herbs (thyme or rosemary), optional

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Thinly slice the Yukon Gold potatoes to about 1/8 inch thick.
  4. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant.
  5. In a bowl, mix heavy cream with salt, pepper, and half of the grated cheddar cheese.
  6. Layer half of the sliced potatoes in the baking dish, pour half of the cream mixture over them, then repeat. Top with remaining cheese.
  7. Cover with foil and bake for 45 minutes; remove foil and bake for another 15-20 minutes until golden brown.
