- 1 lb ribeye or flank steak, thinly sliced
- 1 large onion, chopped
- 2 cups bell peppers (red and yellow), sliced
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 8 oz cream cheese, softened
- 1 cup shredded provolone or cheddar cheese
- Salt, to taste
- Pepper, to taste
- 2 tsp Italian seasoning
Instructions
- In a large pot over medium heat, drizzle olive oil and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Stir in sliced bell peppers; cook for an additional 3 minutes until softened.
- Push veggies to one side of the pot; add sliced steak on the other side. Cook until browned but tender (around 4 minutes).
- Pour in the beef broth while scraping any brown bits from the bottom of the pot. Season with salt, pepper, and Italian seasoning. Bring to a simmer.
- Reduce heat; stir in softened cream cheese until fully melted. Finally, add shredded cheese until melted through.
