  • 1 lb ribeye or flank steak, thinly sliced
  • 1 large onion, chopped
  • 2 cups bell peppers (red and yellow), sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 8 oz cream cheese, softened
  • 1 cup shredded provolone or cheddar cheese
  • Salt, to taste
  • Pepper, to taste
  • 2 tsp Italian seasoning

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Stir in sliced bell peppers; cook for an additional 3 minutes until softened.
  3. Push veggies to one side of the pot; add sliced steak on the other side. Cook until browned but tender (around 4 minutes).
  4. Pour in the beef broth while scraping any brown bits from the bottom of the pot. Season with salt, pepper, and Italian seasoning. Bring to a simmer.
  5. Reduce heat; stir in softened cream cheese until fully melted. Finally, add shredded cheese until melted through.
  6. Serve hot with crusty bread on the side.
