- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- ¼ cup heavy cream
- 2 tbsp granulated sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a lined baking dish.
- Bake the crust for about 10 minutes until golden brown. Let cool.
- In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time. Stir in vanilla and heavy cream until well combined.
- Pour the cheesecake filling over the cooled crust and bake for 40-45 minutes until slightly jiggly in the center.
- Cool completely in the fridge before adding the topping.
- Sprinkle an even layer of granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown. Allow to cool before slicing.
