Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ¼ cup heavy cream
  • 2 tbsp granulated sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a lined baking dish.
  2. Bake the crust for about 10 minutes until golden brown. Let cool.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time. Stir in vanilla and heavy cream until well combined.
  4. Pour the cheesecake filling over the cooled crust and bake for 40-45 minutes until slightly jiggly in the center.
  5. Cool completely in the fridge before adding the topping.
  6. Sprinkle an even layer of granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown. Allow to cool before slicing.
