Ingredients

  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium Yukon Gold potatoes, diced
  • 2 tbsp fresh thyme or parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook until golden.
  2. Add diced carrots, celery, and potatoes; sauté for another 5 minutes.
  3. Pour in vegetable broth to cover all veggies and bring to a boil. Reduce heat and let simmer for 20 minutes until tender.
  4. Blend the soup using an immersion blender until smooth or transfer batches to a regular blender with caution.
  5. Return the blended soup to low heat; stir in heavy cream while seasoning with salt and pepper to taste.
