  • 1 medium butternut squash, peeled and diced
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 6 fresh sage leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper. Roast for about 25 minutes until tender.
  2. Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, sauté minced garlic and sage leaves in olive oil until fragrant (about 1-2 minutes).
  4. Add the roasted butternut squash to the skillet and stir for about 5 minutes.
  5. Pour in heavy cream and add grated Parmesan cheese. Stir continuously until melted and creamy.
