  • 1 medium acorn squash (cubed)
  • 2 cups low-sodium vegetable broth

  • 2 tbsp extra virgin olive oil

Instructions

  4. Add cubed acorn squash and pumpkin spice; sauté for about 8–10 minutes until tender.
  5. Stir in pumpkin puree and vegetable broth; let simmer for flavor melding.
  6. Fold in cooked orzo and top with grated Parmesan cheese before serving.
