  • 6 day-old croissants, halved
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 1 tsp pure vanilla extract
  • 2 tbsp maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Arrange the croissant halves in the baking dish.
  3. In a bowl, beat the softened cream cheese and maple syrup until smooth. Mix in one egg until well combined.
  4. In another bowl, whisk together the remaining eggs, milk, and vanilla extract.
  5. Fold half of the blueberries into the egg mixture and pour evenly over the croissants.
