Ingredients

  • Mascarpone cheese
  • Heavy cream
  • Unsweetened cocoa powder
  • Granulated sugar
  • Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, beat eggs and sugar until light and fluffy to create the sponge cake.
  3. Brew a cup of strong espresso and let it cool.
  4. In another bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla; whip until smooth.
  5. Dip each sponge layer briefly in cooled espresso and place on a serving plate.
