  • 1 can (15 oz) kidney beans, rinsed

  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent (3–5 minutes).
  2. Add ground turkey to the pot, breaking it up as it cooks until browned (5–7 minutes).
  3. Stir in diced sweet potatoes, cumin, chili powder, smoked paprika, salt, and pepper; cook for about 2 minutes.
  4. Pour in diced tomatoes with juice and vegetable broth; bring to a simmer. Reduce heat and let cook for 20–25 minutes until sweet potatoes are tender.
  5. Stir in rinsed kidney beans and simmer for an additional 10 minutes. Adjust seasoning if needed and garnish with fresh cilantro before serving.
