  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup bell peppers (mix of red and green), diced
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup corn (frozen or canned)
  • Fresh cilantro (optional), chopped

Instructions

  1. In a large pot, brown the ground beef over medium heat until no pink remains.
  2. Add the diced onion and bell peppers; sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add the diced tomatoes (with juices), kidney beans, corn, beef broth, cumin, and chili powder; stir to combine.
  5. Bring to a boil then reduce heat to low; simmer uncovered for about 30 minutes.
  6. Taste and adjust seasoning if needed before serving hot, topped with fresh cilantro if desired.
