  • 1 can (15 oz) white beans (Great Northern or cannellini), drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  4. Add chickpeas, white beans, and vegetable broth; stir to combine.
  5. Simmer gently on low heat for 20–25 minutes to meld flavors. Adjust seasoning with salt and pepper before serving.
