- 1 lb ground chicken
- 2 cloves garlic, minced
- 1/2 cup plain breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- Zest of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup orzo pasta
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together ground chicken, garlic, breadcrumbs, parsley, dill, lemon zest, salt, and pepper until just combined.
- Form the mixture into golf-ball-sized meatballs and place them on a lined baking sheet.
- Bake for about 25 minutes until golden brown and cooked through.
- Meanwhile, bring chicken broth to a boil in a pot. Add orzo and cook according to package instructions until al dente.
- Drain excess liquid from the orzo and stir in olive oil along with additional lemon zest, salt, and pepper to taste.
- Serve meatballs over lemon orzo and garnish with fresh herbs if desired.
