Ingredients

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • Zest of 1 lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together ground chicken, garlic, breadcrumbs, parsley, dill, lemon zest, salt, and pepper until just combined.
  3. Form the mixture into golf-ball-sized meatballs and place them on a lined baking sheet.
  4. Bake for about 25 minutes until golden brown and cooked through.
  5. Meanwhile, bring chicken broth to a boil in a pot. Add orzo and cook according to package instructions until al dente.
  6. Drain excess liquid from the orzo and stir in olive oil along with additional lemon zest, salt, and pepper to taste.
  7. Serve meatballs over lemon orzo and garnish with fresh herbs if desired.
