  • 1 lb shrimp (peeled and deveined)
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth

  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Peel and cut the plantains into 1-inch pieces. In a skillet over medium heat, fry the plantain pieces in oil until golden brown, about 3-4 minutes per side.
  2. Remove the fried plantains and drain on paper towels. Mash them until chunky and season with salt.
  3. In another skillet, melt butter over medium heat and sauté minced garlic for about 30 seconds. Add shrimp and cook until pink, roughly 3-4 minutes.
  4. Stir in chicken broth, lime juice, cilantro, salt, and pepper; simmer for 2-3 minutes to blend flavors.
  5. Form mashed plantains into small bowls on plates and top with the garlic shrimp mixture.
