  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups vegetable or chicken broth
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 onion, chopped
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Tortilla chips or cornbread for serving

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey, breaking it apart as it cooks.
  2. Add the chopped onion and bell peppers; sauté until softened.
  3. Stir in chili powder, cumin, garlic powder, salt, and pepper; cook for an additional 2 minutes.
  4. Pour in diced tomatoes (with juice) and broth; bring to a simmer.
  5. Gently fold in rinsed black beans; simmer on low heat for 20 minutes.
