  • 1 cup fresh corn kernels (or frozen)
  • 1 cup jasmine rice
  • 2 tbsp freshly squeezed lime juice
  • 2 tsp chili powder
  • ¼ cup fresh cilantro, chopped
  • ½ cup crumbled feta cheese (or cotija)
  • ½ cup sour cream or Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp smoked paprika

Instructions

  1. Prepare your ingredients by chopping garlic and cilantro.
  2. Cook jasmine rice according to package instructions.
  3. Heat olive oil in a skillet over medium-high heat. Sear seasoned chicken for about 6-7 minutes per side until golden.
  4. Add garlic, chili powder, and smoked paprika once chicken is nearly cooked. Stir in corn and cook for another 3-4 minutes.
  5. In a small bowl, mix soy sauce with lime juice. Drizzle over the chicken-corn mixture before serving.
