- 2 tbsp Southwest seasoning (cumin, paprika, garlic powder, chili powder)
- 1 cup cooked brown rice or quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, sliced
- ½ cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Prepare all ingredients by washing and chopping the vegetables.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook for about 6 minutes per side until golden brown and cooked through.
- Remove the chicken from the pan and let it rest for 5 minutes before slicing into bite-sized pieces.
- While the chicken rests, cook brown rice or quinoa according to package instructions; fluff once done.
- In a large bowl or platter, layer rice or quinoa first, followed by black beans, corn, cherry tomatoes, sliced avocado, and chopped cilantro.
- Top with sliced chicken and squeeze fresh lime juice over the entire dish before serving.
