Description

Southwest Chicken Burrito Bowls are a vibrant and satisfying meal that brings together seasoned chicken, fluffy grains, and fresh vegetables. With the zesty kick of lime, creamy avocado, and smoky chipotle, each bowl is a flavor-packed experience perfect for weeknight dinners or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tsp olive oil
  • 2 tbsp Southwest seasoning (cumin, paprika, garlic powder, chili powder)
  • 1 cup cooked brown rice or quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • ½ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Prepare all ingredients by washing and chopping the vegetables.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook for about 6 minutes per side until golden brown and cooked through.
  3. Remove the chicken from the pan and let it rest for 5 minutes before slicing into bite-sized pieces.
  4. While the chicken rests, cook brown rice or quinoa according to package instructions; fluff once done.
  5. In a large bowl or platter, layer rice or quinoa first, followed by black beans, corn, cherry tomatoes, sliced avocado, and chopped cilantro.
  6. Top with sliced chicken and squeeze fresh lime juice over the entire dish before serving.
