  • 1 lb Italian sausage (spicy or mild)
  • 4 cups cauliflower rice (fresh or thawed if frozen)
  • 1 cup bell peppers (diced, any color)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned and crispy, about 5-7 minutes.
  2. Remove sausage and add chopped onion and minced garlic to the skillet. Sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in diced bell peppers and cook until slightly softened, around 4 minutes.
  4. Add cauliflower rice to the skillet; stir well and cook for another 5 minutes until heated through.
  5. Sprinkle paprika and Italian seasoning over the mixture; taste and adjust seasoning as needed.
  6. If using spinach, fold it into the skillet for the last 2 minutes of cooking until wilted.
